Five straightforward recipes put Darling Downs winter produce at the centre of family meals this July.

Cooler days increase demand for vitamin-rich foods that support immunity, and local growers report strong supplies of oranges, broccoli and carrots through the first week of the month.

Residents near Laurel Bank Park gardens and the Picnic Point Escarpment walk can source the ingredients from weekend stalls tied to Darling Downs Health seasonal-eating sessions held at the Ruthven Street community hall.

Market data released on 8 July showed local oranges at $2.80 a kilogram and broccoli bunches priced at $3.50, figures that reflect a steady supply from farms west of the city.

Simple citrus and green dishes

Orange and fennel salad uses three local oranges, one fennel bulb and a handful of rocket. Slice the fruit and fennel thin, toss with olive oil and a pinch of salt, then serve with grilled chicken. Kale and potato soup starts with a bunch of kale and four potatoes simmered in vegetable stock for twenty minutes before blending. Broccoli and lemon pasta requires one head of broccoli steamed and mixed through wholemeal pasta with lemon zest from Darling Downs citrus.

Root vegetable options

Roasted carrot and beetroot tray bakes two bunches of carrots with two beetroots at 180 degrees for forty minutes, finished with fresh thyme. Apple and carrot slaw combines two grated carrots with one local apple and a yoghurt dressing for a quick side. Each recipe feeds four and keeps preparation under thirty minutes using produce available at current prices.

Shoppers can check stock at the Ruthven Street stalls each Saturday morning before planning the week ahead.
